Spanish Chicken with Chorizo,Olives & Chickpeas

A simple one pot dish packed with flavors of Chorizo, olives, Chickpeas infused with simple spices and herbs. Good enough for a Friday night cooking!

  • Caserole dish


  • 8 chicken thighs skin on or off/optional
  • ½ 100gms Chorizo sausage skin off diced
  • 1 cup pitted olives green/red
  • 1 tin chickpeas with water
  • 1 large white Onion diced
  • 4 tbsp olive oil

herbs and spices

  • 1 tsp thyme dried or fresh
  • 1 tsp Oregano
  • 1 tsp parsely
  • 1 tsp sweet paprika
  • ½ tsp cumin powder
  • 1 tsp onion powder
  • 1 tsp chilli flakes/powder
  • 1 rin Tomatoes tinned or fresh if you prefer
  • 300 ml fresh chicken stock approx
  • 30 ml splash of sherry or white wine
  • 1 tbsp honey
  • salt and pepper to season
  • parsely and fresh thyme to garnish


  • In a casserole dish add heat the olive oil
  • Peel the casing off the Chroizo and dice them into cubes and add them to the pan until it starts releasing the spicy oil
  • Now add the Chicken thighs skin down into this and cook over medium heat and brown them on both ends and remove them and keep aside. 2-3 min
  • delglaze them with some wine or sherry
  • Add remaining oil to the pan and when hot enough add the onions and saute it,add the spices and herbs to it.
  • Now add the removed chicken and chorizo back into the pan, add the stock, chickpeas and tomatoes and cook further for about 10 min, till th tomatoes are cooked and the liquid is reduced.
  • season it with salt and pepper
  • sprinkle with chili flaes and herbs and serve it with steamed rice or couscous.
